I made this tonight and it was delicious! I couldn’t find the shelf stable tofu so I used the refrigerated kind. I added extra spinach because I love my greens and threw in a couple of diced up vegan sausages that I had in the fridge.
Appreciate that I'm not the only one weirded out by not being able to find stuff in the grocery store. Also laughed so hard about eating pasta off the floor. Honestly, fav way to eat is over the sink when no one is watching.
The Wegmans near me was out of all forms of fresh basil and thyme for three weeks recently. In 2023 I couldn’t get a single bag of baby potatoes in any color that wasn’t 85% soft/green/rotten in some way. And don’t get me started on berries. Every store and farmers market I go to anymore, even in peak season, the berries are just mold central. It’s rough out there. The worst part? Last summer I got better tomatoes at Giant than I could find at the farmers market. I live a few miles away from multiple Amish farms in PA and I was fighting for my life to find a good summer tomato. Is life even worth living if you can’t enjoy a perfect tomato in summer?????????
This casserole was tasty- I also had to use refrigerated tofu- nothing shelf stable available, as with many casseroles it got better each time reheated the leftovers.
I don’t know about anybody else, but I have been unable to find dried yellow peas for a long time. I have looked in all the local stores (semi-food desert where I live) and also had my niece look into getting them at Whole Foods where she works as a personal shopper- no luck. Any suggestions, anyone?
I finally found shelf-stable tofu at the coop (www.greatbasinfood.coop) where we do 99.9% of our shopping anyway. The local Raley's certainly didn’t have it.

It's in the oven now. One question: drain the diced tomatoes or not? (I didn't and it doesn't seem too juicy like it's going to bubble over.)

This sounds easy and delicious! My favorite! Can I use basil and/or oregano instead of rosemary? I’m not a huge fan of rosemary.
