My obsession with keeping and using leftovers drives my husband nuts, but I love the challenge of taking leftovers and turning them into something new again. I have made some fabulous refrigerator clean-out pasta dishes that have gotten rave reviews and calls to make it again only to have to tell him that it was a unique one of a kind dish based on what was in the fridge that day!

Last year I noticed that we were spending hundreds of dollars at the grocery store but a lot of it went to waste because somedays it was easier to go out or get take out. I decided to challenge myself for the month of January to see if we could break up with take out and use what we had purchased at the store and all the resulting leftovers. We did it and continue to this day. The family knows that Friday is usually clean out the fridge night and that has resulted in delicious stir frys (I use Bad Manner Japchae sauce-delicious!) or pasta. No one in the house has missed take out or the (sometimes mediocre) high priced restaurant meals. We are eating better and saving $$$ as well!
