When I bought the first book I had no idea the fun I was going to have cooking and eating and sharing with folks. I’m buying the set to give as a shower gift for a Friends daughter who vegan and her family who are trying to include vegan meals to support her. Our friends in the meantime are finding they also give a shit about their food. These two recipes are going to be on the menu Sunday supper!
When I sign up for potlucks at work I always write, ‘vegan nonsense’ and then flip through your books for a recipe. Those flautas ALWAYS a hit. Folks are always shocked that vegan food can be tasty too.
Despite owning the first cookbook, I've never made these. These are definitely going in the regular rotation. I love that you can make them with pantry items. I subbed in mangos in the salsa since I am allergic to peaches and topped with an avocado crema. So good!
I've made those flautas so many times. And thanks for that first book so much. I love how you just put it, that you can give a shit about what's on your plate without being a pretentious asshat.
The first book was literally life changing. When I open it now it just flops open to the recipes I use all the time. All the others are getting to be the same way too.
BTW I never read that bit about the rebranding.... good call. It was a good shtick but ya....
The first book was a revelation! It goes to the beach every year as we’re cooking for a crowd of vegetarians, meat eaters & vegans. They all love your food!!!

That’s what I always go for: good food that happens to be vegan. That means everyone can enjoy it!
