I've been making traditional challah for many years and have seen/tried other vegan versions - and, while really any homemade bread is fabulous, I always found the pale dough of a vegan challah to be sad. The addition of the sweet potato or pumpkin is SUCH A GREAT IDEA!!! I am definitely going to try this one! Thank you <3

Made this challah in my bread machine (removing the dough at the beginning of the third rise to braid and finish in the oven). I divided the dough into 5ths to make a 5 strand braid. It was a beautiful loaf that fell off the baking sheet (lack of edges) while rising and had to be relocated before baking. End result was wide and flat but tasty as all get out and still totally French-toast-able.
