God I love the original recipe and find it to be one of the few ways I can cook eggplant well - char it up on the grill! I personally believe pretty much everything is better with corn.. but I was born and raised in good ol’ Iowa 🌽
Is it possible to grill corn not on the cob? Frozen corn even? A minute or two under the broiler? Or are you shuddering just thinking about it? Corn won’t be in season up in Ontario until mid to late summer, and anything imported is going to be wrapped in plastic half way to hell. Or should I just calm down and wait until it’s in season?

I’d wait until it’s in season or buy frozen, roasted corn kernels instead. That’s what I would do!
What would be a good substitute for eggplant ? I (Brian) not so much of a fan. It’s a texture thing !
Any summer squash like zucchini would be great! You could probably do all corn and just have the marinade as a dressing too.
