Hey Ho, Bad Manners! I really like the look of your gingerbread cookies, but I have an issue. My grandson is allergic to nuts, which includes coconuts, and I make it a policy not to turn holiday celebrations into medical emergencies. Go figure. What type of plant-based milk substitutes best for canned coconut milk?

To make 1 can (400g / 14oz) coconut milk substitute measure out 100g (3.5oz) nut butter and 300g (1 1/4 US cups) water. Add a little water to loosen the mixture first. Stir with a whisk, stick blender or food processor. Then add the remaining water.”

Thanks! I can try the tahini. Almond butter obviously won’t work for someone with a tree nut allergy.
